New Horizons in Application of Digital Olfaction for Table Olive Industry

The DOS committee is pleased to announce that Dr. Daniel Martín Vertedor, from the Scientific and Technological Research Center of Extremadura (CICYTEX-INTAEX, Spain) will join us at this year’s congress and will talk about “New Horizons in Application of Digital Olfaction for Table Olive Industry“.

Dr. Martín will discuss about the use of olfactory systems such as electronic nose to assess abnormal fermentation defects in Spanish-style table olives and the apparition of cooking defect after sterilization treatments in Californian-style ripe table olives. He points out the importance of new emergent electronic technologies incorporation to food industry and, in particular, to table olives sector.
